When Owen was born, a woman from our church brought us this stew.  It was so yummy, and has become one of our favorites!  It is filling, reheats well, and my picky boys eat it.  Serve with cornbread.

Ingredients:

3 cooked chicken breasts, diced

1/2 cup onion

2 cans pinto beans

2 cans petite-diced tomatoes

1 cup salsa

1 can corn

1 can carrots

1/2-1 tsp. garlic (the refrigerated kind in a jar – but we don’t buy this, so I always leave it out)

1 tsp. cumin

1 tsp. chili powder

1/2 tsp. salt

Mix all ingredients and simmer 20 minutes.

    We just made this tonight. It was extremely easy to make. My 7 year old helped and felt like quite a chef. It is delicious-- I highly recommend this recipe!:)
